While I respect your effort to help others get healthy, this infographic by Mozaffarian is inaccurate. Vegetable oils are highly processed substances (produced using high heat & chemicals which cause free radicals which, when consumed, cause inflammation and disease- and are also made up of an unhealthy ratio of omega 3 to omega 6 fatty acids) and should never be consumed. Period. The recommendation that we eat them is false information propagated by those who produce them, sell them and those who get kick-backs- and have the greatest profits to be made from their consumption. Any nutrition we might gain from them is OVERWHELMINGLY undone by their harmful properties.
It is intuitive, in fact, when you compare how grass-fed, organic butter (for instance) is made, compared to how these “shelf-stable”, everlasting, tasteless oils are made.
These oils are far more profitable due to how cheap they are to produce, how they are subsidized by the American government (corn oil, soybean oil, sunflower, safflower oil- all of these being vegetable/canola oil), how long they can last on a shelf, how they can extend the shelf life of the products they are used in, how they are tasteless, have a high smoke point. Yes, all selling points. But they are poison. We must learn to accept inconvenient truths such as this. The ever rising obesity epidemic, which now affects EVERYONE (not just the poor/economically disadvantaged, young or old) shows we are still very much in denial.
“Experts” tell us we still don’t know what the best diet is- or what foods we absolutely should or should not eat. This. Is. Not. True.
Don’t ever eat:
Any/all vegetable oils (e.g. canola, oleic, corn, soy, safflower, sunflower, palm)
Refined sugar
Refined white flour
Simple.
